WE’RE MAKING: SAM’S BONE BROTH CONGEE

There’s something eternally soothing about a bowl of congee. We’re sharing a favorite twist to this traditionally healing dish: Bone Broth Congee infused with Coconut Milk.

By incorporating bone broth and coconut milk, we’re elevating the protein and fat content which transforms the rice into a Resistant Starch. Resistant Starch is a carbohydrate that ferments in the large intestine, creating a prebiotic. Prebiotics feed good bacteria in the gut, which can improve digestive health.

BONE BROTH CONGEE RECIPE

YIELDS 4 CUPS

INGREDIENTS:

+ 2 cups pearled white rice, washed and soaked

+ 2 cups bone broth (I've been loving the richness of Flavor Chef's broth!)

+ 1 can coconut milk

method:

PREPARATION: Begin by thoroughly washing your pearled white rice until the water runs clear. Soak the rice for at least 30 minutes. This step is crucial for achieving that signature congee creaminess.

COOKING: In a large pot, combine the soaked rice and bone broth. Bring the mixture to a gentle boil, then reduce the heat to a low simmer. The key to perfect congee is patience; allow the rice to cook slowly, stirring occasionally to prevent sticking.

ADDING CREAMINESS: Once the rice has softened and started to break down (this usually takes about 30 minutes), stir in the coconut milk. This is where the dish transforms, taking on a luxurious, creamy texture.

FINISHING TOUCHES: Continue to cook the congee for an additional 10 to 15 minutes, or until it reaches your desired consistency.

Here are some of our favorite ways to top this dish : 

+ Herbs galore (parsley, mint, dill, cilantro)

+ Avocado

+ Raw veg (we love rainbow radish, persian cucumbers, sprouts)

+ Cooked veg (carrots, delicata squash, sweet potato)

+ Protein (like a soft boiled egg)

+ Sprinkle with seeds of your choosing
